Yield: 4 – 6 servings
1 head of cauliflower (about 4 cups)
4 tablespoons butter or coconut oil
1/2 teaspoon Herb Salt Blend (1 cup fresh herbs – rosemary, sage, thyme, lemon peel, etc. – and 1/2 cup coarse sea salt)
Black pepper to taste
Chop the cauliflower into 2 to 3 inch pieces.
Steam the cauliflower until it is fork-tender, and place it in a food processor.
Add the butter, Herb Salt Blend, and black pepper.
Puree until smooth and creamy.
